Karakteristik Minyak Isi Perut Ikan Lele (Clarias Gariepinus) Yang Dimurnikan Dengan Bentonite Dan Arang Aktif
ABSTRACT
Waste or by-product of catfish (Clarias gariepinus) which is rarely used is stomach. The contents of catfish stomach is extracted with dry rendering method will produce crude fish oil. Fish oil obtained as a by-product of smoked fish processing often contains a lot of impurities, so a purification process is needed using bentonite adsorbents and activated charcoal. This study aims to determine the effect of the use of bentonite adsorbents and activated charcoal with different concentrations on the characteristics of catfish entrails oil. The method used in this study was an experimental method using a completely randomized design with 3 treatment levels namely bentonite 3%, activated charcoal 7%, and bentonite: activated charcoal (3%:7%). It was repeated 3 times, so that the number of experimental units was 9 units. Parameters analyzed were color, odor, yield, peroxide value, and free fatty acids. The results showed that bentonite and activated charcoal adsorbents had a very significant effect on the characteristics of catfish entrails oil. The addition of 3% bentonite: 7% activated charcoal produced a better color and smell of fish oil compared to other treatments, and a yield value of 47.36%. The addition of 3% bentonite adsorbent: 7% activated charcoal (A3) was able to reduce the most optimal peroxide number compared to other treatments, namely from 5,19 meq/kg to 0,78 meq/kg, and free fatty acids from 2,54% to 0,62%. .
