Perbandingan Sifat Fisik Dan Kimia Vco (Virgin Coconut Oil) Dari Buah Kelapa (Cocos Nucifera L.) Yang Tumbuh Di Sungai Salak Dan Tanjung Pidada Kabupaten Indragiri Hilir
ABSTRACT
Coconut is a potential and strategic plantation crop, this is because coconut is a versatile plant and has high economic value. Indragiri Hilir Regency is one of the first coconut producing districts with total production reaching 359,397 tons in Riau Province. One of the uses of coconut fruit is to be processed into VCO (Virgin Coconut Oil). VCO is an oil obtained from the flesh of fresh old coconuts squeezed with or without the addition of water, without heating and safe for consumption. This study aims to compare the physical and chemical characteristics of VCO on coconut plants from coastal areas and mainland areas by looking at the physical and chemical characteristics of VCO. The physical and chemical properties of VCO determined include: color, taste, smell, water content and iodine number. This research was conducted descriptively. The conclusion from the results of this study is that VCO from coconuts in Sungai Salak and Tanjung Pidada villages have the same physical and chemical properties and meet the quality requirements for physical and chemical characteristics according to the Indonesian National Standard (SNI) 7381:2008.
