Kandungan Karoten Dan Komposisi Asam Lemak Crude Palm Oil (Cpo) Dari Berbagai Varietas Tenera Dan Tingkat Kematangan Buah Kelapa Sawit
ABSTRACT
Riau is the biggest province produce Crude Palm Oil (CPO) in Indonesia
have opportunity to fulfillment provitamin A in its because CPO has the highest
carotene content (500-700 ppm). This research was to analyze carotene content
and fatty acid composition Crude Palm Oil (CPO) of varieties Tenera and level of
maturation. This research was using Factorial Completely Randomized Design
with two factors. The first factor is maturation with three levels were A] = unripe
fruit, A2 = ripe fruit and A3 = overripe. The second factor is Varieties Tenera were
Bi = Tenera Yangambi, B2 = Tenera Marihat, B3 = Tenera Sei pancur 1, B4 =
Tenera Sei pancur 2, B5 = Tenera Langkat. The analyze of parameter in this
research is free fatty acid, carotene content, Deterioration of Bleaching Index
(DOBI), fatty acid composition by gas chromatography, and iodine value. Based
on this research the best treatment is A2B4 (ripe fruit of variety Tenera Sei pancur
1) with free fatty acid 1,44, carotene content 1274,76 ppm, Deterioration of
Bleaching Index (DOBI) 4,56 dan Iodine value 64,42.
