Perencanaan Dan Pembuatan Mesin Pengaduk Saus Pepaya Menggunakan Motor Dengan Sistem Kendali Untuk Pengembangan Potensi Umkm Di Wilayah Kota Pekanbaru
ABSTRACT
Sauce is a liquid or semi-liquid processed product commonly used as a complement to various types of food. Innovation in processing papaya-based sauce offers a promising alternative in the development of functional food products. However, most small and medium enterprises (SMEs) still produce sauce manually, resulting in low efficiency, inadequate hygiene standards, and high labor costs. This study aims to design and fabricate a papaya sauce stirring machine equipped with a speed control system (rpm). The machine manufacturing process includes the fabrication of the main and upper frame using L-profile (angle) iron, joined by Shielded Metal Arc Welding (SMAW) with E-6013 type electrodes. The stirring component is made of stainless steel 304, which complies with food-grade standards, and is welded using E-308L electrodes. The connector component is made from ST37 steel through a turning process with an h7 hole tolerance and is equipped with threads as a locking mechanism. The frame cover is made from galvanized plate with a thickness of 0.8 mm. After the components were completed, quality control was carried out, particularly on the stirrer and connector, which play crucial roles. The machine was then assembled and underwent functional testing. Each manufactured component demonstrated conformity to the design specifications. During the construction of the main and upper frame, a total of 27 E-6013 electrodes and 1 E-308L electrode were used. Furthermore, the manufacturing results of the stirrer and connector components showed accurate fitting. The holes on the frame for installing the cover, motor mount, hinges, and speed control system were also fabricated with precision. This confirms that all production outcomes met the previously established design specifications.
