Desain Dan Analisis Kinerja Co-Current Drying Chamber Pada Spray Drying Santan Kelapa Dengan Kapasitas 1 Liter/Jam
ABSTRACT
Indonesia is one of the largest coconut producers in the world, with coconut milk being one of its high-value derivatives. However, coconut milk is highly perishable and prone to degradation. To improve shelf life and product stability, the spray drying method is employed to convert liquid coconut milk into powder. Nevertheless, this process often encounters challenges such as wall deposition inside the drying chamber, which reduces yield and product quality. This study aims to design and analyze the performance of a co-current drying chamber modified with two tangential hot air inlets to minimize wall deposition and increase product yield. The spray drying system was designed with a 1 liter/hour capacity and utilized a pneumatic nozzle atomizer. Experiments were conducted by varying the hot air flow rate and inlet temperature. The results showed that the highest yield, 96.37%, was obtained at an air flow rate of 10 m³/h and an inlet temperature of 140 °C. Meanwhile, the lowest wall deposition, 3.63%, was also recorded at the same condition. These results cannot be considered as representative of the optimal condition, as they are not accompanied by a visual and physical evaluation of the product to accurately assess the success of the drying process. This research contributes to the development of drying chamber designs for drying heat-sensitive food products such as coconut milk.
