Modifikasi Alat Penggiling Daging Ayam Dari Sistem Manual Ke Sistem Penggerak Motor Listrik
ABSTRACT
Micro, Small, and Medium Enterprises (UMKM) in the culinary sector face challenges in production efficiency due to the limitations of the equipment they use. Many business owners still rely on manual methods or simple machines that are unhygienic, inefficient, and difficult to clean. To address these issues, this final project aims to modify a manual meat grinder into a motorized system using an electric motor. The main components of the machine include a frame (chassis), an electric motor as the drive, a shaft, cutting blades, a grinding tube, a screw conveyor, a pulley, and a V-belt. Food-grade materials such as Stainless Steel 304 and Aluminum Alloy 1100 are used in the grinding tube to maintain hygiene and ease of cleaning. The machine is powered by a 0.75 HP electric motor, which is energy-efficient and designed to work with household electricity. Test results using the manual system showed that the machine could grind chicken meat at a capacity of 5,37 kg/h, with an average grinding time of 11 minutes per kilogram. In contrast, the motorized system demonstrated a much faster grinding time, with a maximum output of 18.8 kg/h and an average grinding time of 3 minutes per kilogram. The machine is designed to be easily disassembled for maintenance, simplifying the cleaning process. Additionally, it is cost-effective to produce, making it accessible for UMKM with small to medium production scales. This versatile meat grinder is expected to be a practical and efficient solution to support processed food production activities, while also enhancing the competitiveness and productivity of UMKM in Indonesia.
