“Analisis Lean And Green Manufacturing Guna Meningkatkan Produktivitas Pada Pabrik Tahu” (Studi Kasus: Pabrik Tahu Sumber Rezki)
ABSTRACT
Sumber Rezki tofu factory is one of the small and medium business industries
engaged in the production of tofu. This study aims to analyze the productivity of
tofu production with a lean and green manufacturing approach. The lean
manufacturing approach uses VSM (value stream mapping), WRM (waste
relationship matrix), WAQ (waste assessment questionnaire), fishbone diagrams,
PAM (process activity mapping) methods to analyze tofu production productivity.
The green manufacturing approach based the AHP (analytical hierarchy process)
method used to determine the indicators for each criterion. After doing research
on the time of the tofu production process, the future value stream mapping was
obtained the total production process of 633.531 s/kg. The production process
analysis the value added of 50%, the production process which necessary non
value added of 43%, and the production process which value added of 7%. After
analyzing lean manufacturing, a fishbone diagram was made to analyze the waste
in term of raw materials, operators, and equipment. In the green manufacturing
approach, the AHP method was used to analyze the indicators that occur in the
tofu factory, namely water, energy, and materials. Based data of computed, the
AHP value criteria, namely water with a value of 63% for alternative 2, water
recycling, which was 42.90%. The results of analysis revealed the application of
the 5S method at the Sumber Rezki tofu factory is still not optimal.
