Pembuatan Alat Penggiling Ubi Kering Untuk Tepung Mocaf
Abstract
Mocaf flour (Modified Cassava Flour) is flour made from cassava or cassava that has gone through a fermentation process using lactic acid bacteria to modify cassava cells, resulting in a smoother texture and whiter color than ordinary cassava flour. This final project was made with the aim of making it easier for farmers to process sweet potatoes into flour so that a sweet potato grinder is needed to make it easier for farmers to grind or crush sweet potatoes into flour called mocaf flour. To produce the mocaf flour, a sweet potato grinder is needed which consists of the main components, namely the shaft, rotary disk, frame, hopper, and motor. The manufacture of the sweet potato grinder begins with making the shaft by using a lathe for the process of roughing, facing, and making threads on the sides of the workpiece. Then proceed with making a rotary disk using a drill machine for the process of making holes in the workpiece, a grinding machine to scrape the sides of the workpiece, and a milling machine for the process of making the position on the workpiece. Next, the hopper is made using a grinding machine to cut the plate to be used according to a predetermined design. Then make the tool frame using a grinding machine to cut the workpiece according to the desired size, a welding machine to connect the workpiece parts after cutting, and use a drill machine to make the position on the potato grinding tool frame. Then all components are assembled and installed using a motor as the driving force. The process of making mocaf flour by inserting thinly sliced sweet potato in the hopper then the sweet potato will be ground on a rotary disk using a motor as a driver so that the results after milling can be accommodated in the lower hopper. The making of this sweet potato grinder has been able to be used properly according to its function, and the sweet potato grinding machine can accommodate 200 grams of dried sweet potato that has been sliced in the form of chips, the machine used a machnine with a maximum rpm of 3600rpm, at 3600rpm it can produce 200gr/5 sec , or can produce (40 gr/sec), (2,400 gr/hour).
