Analisis Rantai Pasok Dan Nilai Tambah Agroindustri Kakao Chokato Di Kelurahan Kapalo Koto Kecamatan Payakumbuh Selatan Kota Payakumbuh Sumatera Barat
ABSTRACT
The purpose of this study is to identify the supply chain and added value of each supply chain actor and determine the priority of chokato cocoa supply chain strategy in Kapalo Koto Village, South Payakumbuh District, Payakumbuh City, West Sumatra. Data analysis was carried out with value-added analysis, SWOT analysis, and Analytical Hierarchy Process (AHP). The results showed that chokato cocoa supply chain starts from farmer as raw material providers, chokato agroindustry as processors, chokato shop as parties who sell to consumers. The added value obtained by cocoa farmers is IDR 1,200 with an added value ratio of 40% (high category), while the added value obtained by agroindustry chokato cocoa fat products is IDR 51,159 with an added value ratio of 51,7% (high category), cocoa powder products IDR 44,159 with an added value ratio of 47,9% (high category), and other cocoa products of IDR 97,239 with a value added ratio of 64,6% (high category). The totalvalue of internal factors is 3,303 and the total value external factors is 2,432. A priority strategy that can be applied to improve chokato cocoa supply chain management is to add partnerships with raw material suppliers with a weight of 0.249.
