Analisis Nilai Tambah Udang Menjadi Kerupuk Udang Di Desa Tanah Merah Kecamatan Tanah Merah Kabupaten Indragiri Hilir Provinsi Riau
The community of Tanah Merah Village utilizes shrimp caught by local fishermen as raw material for the production of shrimp crackers. Initially, these catches were either consumed for household needs or sold at low prices. However, over time, the community realized the economic potential of processing shrimp into a value- added product, namely shrimp crackers. This study aims to calculate the total cost, revenue, profit, and analyze the value added from processing shrimp into shrimp crackers in Tanah Merah Village. The method used in this research is a survey, with primary and secondary data collection through interviews using questionnaires and literature studies. The respondents of this research consist of five household shrimp cracker processing industries in Tanah Merah Village. Data were analyzed using cost analysis, revenue, profit and Hayami method analysis (1987). The results showed that the average total cost of the shrimp cracker household industry in Tanah Merah Village, Tanah Merah Sub district, Indragiri Hilir District was Rp13.537.795,28 with a revenue of Rp20.537.000,00 and a profit of Rp6.999.204,72 per kilogram. The value added from processing shrimp into shrimp crackers in Tanah Merah Village is Rp29,977,48 per kilogram, with a value-added ratio of 38,55%, which falls into the moderate category.
