Uji Potensi Metabolit Sekunder Dari Ekstrak Biji Pepaya California (Carica Papaya Linn Var. California) Sebagai Antioksidan Dan Inhibitor Enzim Α-Amilase
Papaya seeds (Carica papaya L.) of the California variety are waste containing secondary metabolites which are thought to have potential as antioxidants and inhibitors of the α-amylase enzyme. Therefore, in this study, the antioxidant and α-amylase capabilities of California papaya varieties were determined. California papaya seeds, both fresh and dried, were extracted with three solvents, namely n-hexane, ethyl acetate (soxhletation method) and water (infusion method). Each extract was tested for several variables, including water content, percent yield, phytochemical test, antioxidant IC50 and α-amylase IC50. The result was that the water content of fresh papaya seeds was 81.10% and the percent yield of the four extracts ranged from 2.20% - 34.78%. The antioxidant IC50 value of the four extracts was > 200 ppm in the very weak category or considered to have no potential as an antioxidant. Dried papaya seed ethyl acetate extract has the potential as an α-amylase inhibitor with an IC50 of 78.25 ppm in the less active category, while the other three extracts have no potential as inhibitors. Secondary metabolites that are considered to have potential as α-amylase inhibitors are alkaloids and saponins.
