Smoke is a result of condensation or condensation of vapors from combustion directly or indirectly from materials containing lignin, cellulose, hemicellulose Smoke is obtained from combustion products containing cellulose, hemicellulose and lignin which are incomplete combustion, ie combustion with limited oxygen . The purpose of this study was to identify liquid smoke from young coconut husk by varying the mass on young coconut powder. The workings of this research are to start with the preparation of raw materials, then proceed with the manufacture of liquid smoke using pyrolysis reactor, and analysis of the resulting liquid smoke. The parameters observed were rendemen, acidity (pH), acid content, phenol content, species weight and viscosity. The results showed that the young coco pyrolysis with 300 gram mass produced liquid smoke with characteristics close to the SNI that is 31.8% yield, total acid 4,68%, weight of 1.084 gram / ml, pH 2 and 3, and viscosity 0.903 CP. Coconut coir has potential as a raw material for the manufacture of liquid smoke.
