Pembuatan Fruit Leather Dari Campuran Buah Sirsak (Annoma Muricata L.) Dan Buah Melon (Cucumis Melo L.)
The study was purpose to get the best combination of red dragon fruit (Hylocereus polyrhizus) and mango (Mangifera indica Linn). The research used a Complete Randomized Design (CRD) with 6 treatments and 3 replications. The treatments were SM1 (Red dragon fruit 100% : mango 0%), SM2 (Red dragon fruit 80% : mango 20%), SM3 (Red dragon fruit 60% : mango 40%), SM4 (Red dragon fruit 40% : mango 60%) SM5 (Red dragon fruit 20% : mango 80%) and SM6 (Red dragon fruit 0% : mango 100%). The data obtained were analyzed statistically using Anova and DNMRT at 5%. The research showed that using red dragon fruit and mango significant on water content, ash content, degree of acidity (pH), crude fiber content, total sugar content and organoleptic test. The best treatment of fruit leather from this research is N1M3 which have water content 11,00%, ash content 0,63%, degree of acidity (pH) 5,36, crude fiber content 7,34%, total sugar content 59,57%, reddish yellow color, a little bit red dragon fruit flavour and mango flavour, sweetness taste, the texture was springy and overall assesment of fruit leather was preferred by the panelist’s.
