Kombinasi Buah Pedada (Sonneratia Caseolaris) Dan Kelopak Bunga Rosela (Hibiscus Sabdariffa) Terhadap Mutu Fruit Leather
The study was purpose to get the best combination of pedada fruit (Sonneratia caseolaris) and roselle flower (Hibiscus sabdariffa). The research used a Complete Randomized Design (CRD) with 5 treatments and 3 replications. The treatments were PR1 (Pedada fruit 90% : roselle flower 10%), PR2 (Pedada fruit 80% : roselle flower 20%), PR3 (Pedada fruit 70% : roselle flower 30%), PR4 (Pedada fruit 60% : roselle flower 40%) and PR5 (Pedada fruit 50% : roselle flower 50%). The data obtained were analyzed statistically using Anova and DNMRT at 5%. The research showed that using pedada fruit and roselle flower significant on water content, ash content, degree of acidity (pH), total crude fiber content of soluble solids, crude fiber content, reduction sugar content and organoleptic test. The best treatment of fruit leather from this research is PR3 which hade water content 12,29%, ash content 0,87%, degree of acidity (pH) 2,80, total crude fiber content of soluble solids 66,85°Brix, crude fiber content 5,47% and reduction sugar content 42,60%. Rather red color, a little bit pedada fruit and roselle flower flavour, sour taste slightly sweet, the texture rather springy and overall assesment of fruit leather was preferred by the panelist.
