Uji Ketahanan Bakteri Asam Laktat Yang Diisolasi Dari Limbah Padat Pengolahan Susu Kedelai Terhadap Antibiotik Dan Garam (Nacl)
This research aimed to determine the growing resistance of isolates of lactic acid bacteria isolated from the processing of solid waste of soy milk against antibiotics and salt. This study was experimentally conducted to test the resilience of LAB isolates L. pentosous strain Lac.18, L. plantarum strain SRCMC, L. plantarum strain VP_1.1, L. plantarum strain VP_3.3, L. casei strain IMAU.5165, and L. plantarum strain KLAB4 against antibiotics and salt. Lactic acid bacteria isolates were tested for antibiotics including erythromycin (15 μg), penicillin (10 μg), amoxicillin (25 μg), chloramphenicol (30 μg), tetracycline (30 μg) and cefadroxil (15 μg). Lactic acid bacteria isolates were tested in different concentrations of 1.5, 5, and 15% with three replications per concentration. The observation results showed that isolates L. pentosous strain Lac.18, L. plantarum strain SRCMC, L. plantarum strain VP_1.1, L. plantarum strain VP_3.3, L. casei strain IMAU.5165, and L. plantarum strain KLAB4 could survive and were able to grow well on media that have antibiotic treatments. Lactic acid bacteria isolates were strongly resistant to all antibiotics except isolates L. pentosous strain Lac.18 and L. plantarum strain VP_3.3 that grew intermediately in the medium containning amoxicillin and L. casei strain IMAU.5165 in the medium containing tetracycline. Isolates L. pentosous strain Lac.18, L. plantarum strain SRCMC, L. plantarum strain VP_1.1, L. plantarum strain VP_3.3, L. casei strain IMAU.5165, and L. plantarum strain KLAB4 could survive and grew well in a medium containing salt with different concentrations. Total LAB in media containing 1.5% salt were 9.85 to 9.97 log cfu.ml-1, 5% salt varied from 9.71 to 9.83 log cfu.ml-1 and 15% salt ranged from 9,18 to 9,47 log cfu.ml-1. Isolate L. plantarum strain VP_1.1 had the highest number of colonies compared to other isolates.Keywords: Lactic acid bacteria (LAB), antibiotics, salt (NaCl), and resistance.
