Karakteristik Sirup Kulit Buah Naga Merah Dengan Pemanis Alami Ekstrak Daun Stevia
ABSTRACT
Syrup is a sweet thick solution and can be made into a drink by adding some water. The sugar content in stevia leaves can be used as a natural sweetener in red dragon fruit peel syrup. The purpose of this research was to get the best concentration of stevia leaf extract in the making of red dragon fruit peel syrup. This research was conducted experimentally by using a completely randomized design with four treatments and four replications. The treatments in this research were the concentrations of stevia leaf extract (1%, 3%, 5% and 7%). Data obtained were statistically analyzed using analysis of variance and continued with Duncan’s New Multiple Range Test (DNMRT) at a 5% level. The result of this research showed that the concentration of stevia leaf extract significantly affected acidity (pH) and sensory characteristics of taste. The best treatment in this research was S2 treatment (3% of stevia leaf extract) where pH value of 4.48, viscosity of 275.50 cP, and total sugar content of 16.15%. The descriptive test showed that red dragon fruit peel syrup had red color, scented with stevia leaves and dragon fruit peel, sweet taste, slightly thick texture and overall assessment hedonically was favored by panelists.
