Waktu Ekstraksi Terhadap Kualitas Pektin Kulit Cempedak
ABSTRACT
Chempedak is a fruit that thrives in the tropics. The high production of cempedak fruit causes the rind of the fruit to become one of the wastes that can be used as raw material for pectin that are needed in the food, cosmetic and pharmaceutical industries. This study aims to determine the selected extraction time on the pectin quality of cempedak rind. This study used a non-factorial completely randomized design (CRD) consisting of five treatments and three replications. The treatments are L1 (1 hour 30 minutes), L2 (1 hour 45 minutes), L3 (2 hour), L4 (2 hour 15 minutes) and L5 (2 hour 30 minutes). The data obtained were analyzed statistically using analysis of variance and continued with Duncan’s multiple range test (DMRT) at the 5% level. The results of the analysis showed that the extraction time affected the yield, ash content and methoxyl content but did noy have any significant effect on moisture content. The best treatment from this research was L3 treatment (2 hours) with 8.08% yield, 4.39% water content,
5.25%, ash content, 3.35% methoxyl content.
