Pemanfaatan Ekstrak Serai Sebagai Pengawet Alami Nira Kelapa Dalam Pembuatan Gula Kelapa Bubuk
ABSTRACT
Coconut sugar powder is sugar made from coconut sap (nira) which is processed into powder. Coconut sap damage can be prevented by adding natural preservatives and whiting. This study aims to determine the effect of using lemongrass extract combined with a solution of whiting as a preservative of coconut sap on the quality of powdered coconut sugar produced. The study was conducted using a completely randomized design (CRD) with three treatments and five replications in order to obtain fifteen experimental units. The concentration of whiting solution used was 0,06% b/v and the concentration of fresh lemongrass extract solution used was 1,00%, 1,25%, and 1,50%% (b/v). The parameters observed included the pH value of the sap and other analyzes of powdered coconut sugar, namely water content, reducing sugar content, sucrose content, total sugar content, color analysis, brown color intensity, solubility time, yield, and sensory analysis, namely descriptive and hedonic test on color, taste, aroma and appearance. The results obtained from lemongrass extract significantly affected the intensity of the brown color of powdered coconut sugar, but did not significantly affect the pH value of coconut sap, water content of powdered coconut sugar, reducing sugar content, sucrose content, total sugar content, color analysis, solubility time, yield, and sensory analysis.
