Abstract
This research was conducted on November 8th – Desember 8th 2021 at the
Kapiek Grilled Fish Restorant, Pulau Jambu Village, Kuok District, in Kampar
Regency, Riau Province. The purpose of this study was to determine the
characteristics of visitors, productions costs and raw materials, culinary business
income. The research method used is a survey method. Data analysis used
descriptive, data collection techniques through primary data and secondary data.
Respondents used as many as 100 visitors with accidental sampling technique.
The results showed visitors from 15-60 years old. Visitors came from Kampar
50%, Outside Kampar 40% and Outside Riau 10%. Production costs on off-peak
days are IDR 197,031,929/year, normal day of IDR 178,043,929/year, peak day of
IDR 422,845,429/year. The average annual income, idle days is IDR
2,4330,000/day or IDR 201,790,000/year. An ordinary day is IDR 2,566,000/day
or IDR 185,640,000/year. And on busy days it is IDR 3,741,000/day or IDR
456,455,000/year
