Evaluasi Keamanan Probiotik Dan Aktivitas Antioksidan Lactobacillus Fermentum Inacc B1295 Yang Dienkapsulasi Cellulose Microfiber Dari Pelepah Kelapa Sawit Selama Penyimpanan
ABSTRACT
Evaluation of the safety and properties of probiotics needs to be carried out on new strains before they are declared as probiotics. The purpose of this study was to evaluate the safety and antioxidant activity of CMF-encapsulated probiotics from oil palm fronds during storage at different temperatures. This study was carried out experimentally consisting of safety evaluations analyzed descriptively and antioxidant activity statistically analyzed in a factorial complete randomized design (CRD). The experimental unit consisted of two factors, namely temperature and storage time (0, 14 and 28 days) with three replications each to obtain 18 experimental units. Parameters observed in this study were hemolytic activity test, cytolysin production test, gelatinase production test, DPPH radical scavenging ability and hydroxyl radical scavenging (HRS) activity. The observed data of antioxidant activity were analyzed for variance and continued with the duncan multiple range test (DMRT) at 5% level. The results showed that LAB encapsulated by CMFH from palm fronds was able to maintain its safety properties with negative results in the safety test during storage at room (±25°C) and cold temperature (4°C). The storage temperature, storage time, and their interactions significantly affected (P05) influenced HRS value which ranged from 52.15% to 74.90%. This fact shows that Lactobacillus fermentum InaCC B1295 encapsulated in CMF of palm fronds is declared safe with the results of the hemolytic activity test, cytolysin production test, gelatinase production test and it has potential as a probiotic.
