Aktivitas Antimikroba Isolat Bakteri Asam Laktat Dari Nira Aren Terhadap Listeria Monocytogenes Fncc-0156 Dan Salmonella Typhimurium Fncc-0050
ABSTRACT
Lactic acid bacteria have been found in spontaneously fermented palm sap, but their ability to inhibit the growth of pathogenic bacteria to be categorized as probiotics is unknown.. Listeria monocytogenes and Salmonella typhimurium are pathogenic bacteria that often contaminate food and put human health at risk. The purpose of this study was to determine the antimicrobial activity of LAB isolates from palm sap against pathogenic bacteria Listeria monocytogenes FNCC-0156 and Salmonella typhimurium FNCC-0050. The data obtained were descriptively analyzed from the observations were averaged and then tabulated in tabular form and calculated the standard deviation. The results obtained showed that all LAB isolates had antimicrobial activity against Listeria monocytogenes FNCC-0156 and Salmonella typhimurium FNCC-0050 with different abilities. The diameter of the inhibition zone of LAB isolate against Listeria monocytogenes FNCC-0156 was 6.72‒9.31 mm and against Salmonella typhimurium FNCC-0050 was 6.44‒8.71 mm. The pH value of the medium inoculated with LAB isolates ranged from 3.70‒4.10. The diameter of the inhibition zone of cell-free supernatant by LAB isolate against Listeria monocytogenes FNCC-0156 was 3.47‒4.78 mm and that against Salmonella typhimurium FNCC-0050 was 4.23‒5.31 mm. The pH value of the BAL isolate cell-free supernatant ranged from 4.10‒4.16.
