Isolasi Kitin Dari Limbah Kulit Udang Jerbung Dengan Variasi Konsentrasi Naoh Pada Tahap Deproteinasi
Shrimp shell waste that easy to find at Pekanbaru markets not been widely used. Therefore, the waste needs serious handling mainly because these waste contain chemical compound that potentially be more useful material that is chitin. Chitin is a polysaccharide, polymer composed of monomer N-acetyl-glucosamine and β-1,4 bonding. The purpose of this research was proximate analysis on jerbung shrimp shell, studied effect of the concentration of NaOH in the deproteinization stage and analyzed chitin by spectrophotometer FTIR (Fourier Transform Infrared). Research isolation of chitin from jerbung shrimp shell waste start with preparation of jerbung shrimp shell waste and further the process of making chitin with several stage: deproteinization, demineralization and bleaching. Deproteinization process is using variation the concentration of NaOH (3%, 4% and 5%), demineralization is using HCl 1 N, next bleaching process is using NaOCl 4%. The result showed that isolation of chitin from jerbung shrimp shell (Penaeus merguiensis) with variation concentration of NaOH at deproteinization stage is acquisition of the highest percentage of chitin obtained is at concentration of NaOH 3% at 29,02% and characterization of jerbung shrimp shell obtained moisture, ash, fat and protein from chitin that is 10,4%; 32,33%; 3,1% and 30%.
