Pengaruh Penggunaan Asam Jawa (Tamarindus Indica L) Terhadap Kandungan Logam Berat Pb, Cd Dan Cu Pada Kerang Bulu (Anadara Antiquata) Dengan Konsentrasi Dan Lama Waktu Perendaman Berbeda
This research was aimed to determine the optimum concentration of tamarind and the soaking time to reduce the heavy metals Pb, Cd and Cu in the hairy cockle (Anadara antiquta). The method of the research was experimental method and the experimental design was the Completely Randomized Design (CRD). The treatmentswas soaking the cockle in the tamarind solution at different concentrations (15% and 25%) and for different time (60 and 90 minutes). All samples were assessed for their chemical contents, metal contents, including Pb, Cd and Cu, and organoleptic value. The chemical contents of the fresh cockle were water 80,37% (ww), ash 8,86% (dw), protein 58,02% (dw), fat 14,16% (dw) and carbohydrate (by difference) 18,95% (dw). The result showed that the soaking time 90 minutes into the 25% tamarind solution was the best treatment, whereas the reduction of heavy metal Pb 74,69%, Cd 81,39% and Cu 68,72%. The soaking of the cockle into the tamarind solution was affecting to their organoleptic quality. The higher concentration and the longer soaking time tent to show their character of brownish yellow and less attractive appearance, cockle mixed with the smell of tamarind smell and slightly stiff texture.
