Sensitivitas Bakteri Salmonella Sp. Dan Escherichia Coli Yang Di Isolasi Dari Ikan Jelawat Segar (Leptobarbus Hoeveni) Terhadap Larutan Asap Cair
Jelawat fish (Leptobarbus hoeveni) is native Indonesian fish found in the rivers of Sumatra and Kalimantan. Riau Province is one of the centers of the production of sooty fish, where the production of cultivated fish is starting to increase every year. This study aims to identify the types of bacteria found in fresh soot fish and determine the sensitivity of bacteria to liquid smoke solutions and determine the value of the Minimum Inhibitory Concentration (MIC) for test bacteria. The test parameters are (TPC analysis, bacterial identification and liquid smoke inhibition testing). The results of identification of the types of bacteria in sooty fish showed positive results that the soot fish contained Salmonella sp, Escherichia coli. Antibacterial activity testing was carried out using the well diffusion method with the addition of liquid smoke and distilled water at concentrations of 25%, 13%, 7%, 3% and 1.5%. The data obtained is presented in the form of tables, schemes and images which are then analyzed descriptively so that conclusions can be drawn. The results of testing of liquid smoke as an antibacterial against Salmonella sp bacteria, Escherichia coli is the formation of clear zones which indicate an inhibition in these bacteria. Each concentration of liquid smoke provides a different inhibition zone for the test bacteria. The Minimum Inhibition Concentration is found at a concentration of 1,5% for Escherichia coli bacteria and 3% for Salmonella sp. Keywords: Escherichia coli, Jelawat fish, Liquid smoke, Salmonella sp.
