Pengaruh Ph Terhadap Hidrolisis Protein Ikan Tembakul (Periophthalamus Minutus) Dengan Penggunaan Enzim Alcalase
This study aims to determine the effect of pH on protein hydrolysis Tembakul fish (Periophthalmus minitus) with the use of the enzyme alcalasefind out the best pH against the protein hydrolysis of the capul fish using and alcalase enzymes. The method used is an experimental method withA non-factorial Completely Randomized Design (CRD) consisting of 3 levels of treatmentnamely P1 (pH 6.5), P2 (pH 7.5) and P3 (pH 8.5). The parameters observed areanalysis of protein content and water content in Tembakul fish flour, flour yieldTembakul fish, analysis of non-protein nitrogen levels and protein analysis methodslowry on the protein capul fish hydrolyzate. The results showed thatP2 treatment (pH 7.5) is the best treatment with the amount obtainednon-protein nitrogen content 11.02%, and protein content 8.58%.
