Pemanfaatan Tulang Ikan Yang Berbeda Sebagai Sumber Kolagen
ABSTRACT
Collagen can be obtained through extraction using organic or inorganic acids. Collagen is the main structure of the binding tissue of total protein in vertebrate and invertebrate body tissue. This study was aimed to determine the characteristics of collagen from different fish bones, using HCl immersion on the quality of chemical and physical collagen. The research method used was an experiment, by comparing the fishbone collagens from catfish and eel tailed catfish. The test parameters used were yield, moisture, ash, protein, pH, and FTIR. Collagen produced to a paste with the characteristics of the fishbone collagens from catfish and eel tailed catfish: 64.17% and 64.02% moisture, ash of 0.94% and 0.83%, protein of 91.06% and 90.26%, yield of 15.67% and 14.33%, pH of 3.7 and 3.53 respectively. the fish bone collagens of catfish and eel tailed catfish had functional groups of amide A, amide B, amide I, amide II, and Amide III.
