Karakteristik Minyak Yang Diekstraksi Dari Kepala Ikan Tuna (Thunnus Albacares)
ABSTRACT
Tuna is commonly used for frozen fish production such as loin, the byproducts of loin products are in the form of head, skin and bones. These by products have not been used optimally. one of the byproducts in the form of headaches can be used as a raw material for oil known to contain more unsaturated fatty acids than viscera and skin. Fish oil was extracted by the Soxhlet method using organic solvents. This research was aimed to determine the best solvent for extraction, physicochemical characteristics, and fatty acid profile of tuna head oil. The research design used nonfactorial randomized complete design as a treatment was ethanol, methanol and isopropanol solvents. The analysis parameters were consisted of yield, free fatty acid numbers, peroxide, iodine, saponification and fatty acid profiles. The characteristic of physicochemical tuna head oil extraction with methanol extract yield 18.38%, free fatty acids 1.63%, peroxide value 2.12 meq/kg, iodine 25.22 g iod/100g, and saponification 175.05 mgKOH/kg. Tuna oil with ethanol extraction produced yield, free fatty acids, the amount of peroxide, iodine, and saponification were 21.32%, 1.83%, 3,45 meq/kg, 103.18 g iod/100g, and 174.39 mgKOH/kg. Fish oil extracted from isopropanol was yield 22.93%, free fatty acid 2.01%, peroxide value 4.31 meq/kg, iodine 104.26 g iod/100g, safonification 172.50 mgKOH/kg. Profile of fatty acids oil of tuna were extracted with different solvents (ethanol, methanol and isopropanol) produced 53% saturated fatty acids, monounsaturated fatty acids 30% and polyunsaturated fats 17%. The most unsaturated fatty acids were obtained with isopropanol extract, monounsaturated fatty acids (MUFA) 29.08% and polyunsaturated fatty acids (PUFA) 17.58%. The results showed that fish oil extracts with methanol, ethanol and isopropanol were significantly different from the yield, free fatty acid, peroxide, and saponification.
