Beban Kerja Pramusaji Di Food And Beverage Service Di Departement Di Pesonna Hotel Pekanbaru
Hotel is a commercial business that open for public which offers service and has three public facilities which are accommodation, food and beverage service departement is one of the most important part in hotel operational because in many occasions at hotel usually there will be a time to serve food and beverage in between time. Often times while serving food and beverage the waitress who were in charge. The purpose of this research is to know how much the ideal task of the food and beverages waitress at Pesonna hotel Pekanbaru. This research use exponential smoothing technique and descriptive quantitave method to examine the problem by directly observing the waitress at Pesonna hotel Pekanbaru. The researcher directly experienced as a waitress at Pesonna hotel Pekanbaru and did every task assigned. In Food and Beverage Service to get the exact data. For data collection technique in this research was done by interview and documentation. The result from this research show that the task of waitress at Pesonna hotel Pekanbaru didn’t appropriate with the number of waitress available. It’s proven from the result of calculating the effective working times to wasted time (40%), break time (20%), and Personal time (20%). The conclusion is that Pesonna hotel Pekanbaru needs the equal work task between the waitress. Therefore, the service quality in Food and Beverage Service Departement at Pesonna hotel Pekanbaru can be increasing.
