Karakteristik Viskositas Alginat (Sargassum Plagyophyllum) Dengan Penambahan Kalsium Karbonat
This research aims to determine the best CaCO3 concentration in increasing
alginate viscosity. The study was conducted with an experimental method, namely,
processing alginate brown seaweed (Sargassum plagyophyllum) with the addition of
calcium carbonate (CaCO3). The experimental design used was a non factorial
Complete Randomized Design (CRD), with different treatment given was the
difference in the concentration of calcium carbonate used, namely by administering
concentrations of 5 mM, 10 mM, 15 mM and 20 mM. The parameters observed were
proximate analysis (water content, ash, protein, fat, fiber and carbohydrate), yield and
viscosity. The results showed that the addition of 20 mM CaCO3 treatment was the
best treatment, with a viscosity value of 224.92 cP. Proximate value of Sargassum
plagyophyllum, water content 27.94%, ash content 30.62%, protein content 5.77%,
fat content 0.89%, fiber content 28.16% and carbohydrate 19.67%. Alginate yield is
19.36%, alginate water content is 10.84% and alginate ash content is 23.84%.
