Kinetika Pertumbuhan Biomassa Selulosa Mikrobial Pada Pembuatan Nata De Dragon Dengan Penambahan Sukrosa
ABSTRACT
This study aimed to determine the best sucrose formulations, as well as the
value of the maximum velocity (Vmax) and the constant Michaelis-Menten (KM) on
microbial cellulose, is produced. This research was conducted experimentally using
a non factorial Completely Randomized Design (CRD) with four treatments and
four replications. The treatments in this study were the addition of sucrose in
preparation of Nata de dragon namely P1 6%, P2 8%, P3 10%, and P4 12%. The
obtained data were analyzed statistically using analysis of variance and differences
between treatments were analyzed using Duncan's Multiple Range Test (DMRT) at
the 5% level. The results showed that the concentration of sucrose significantly
affected (P0.05) on total sugar content. The results showed
that the addition of 10% sucrose was the best formulation to produce Nata de
dragon, which had 0.34 cm thickness, 9.67 g of wet weight, 8.41 g of dry weight,
1.13% yield, and 5.86% total sugar content. The growth kinetics value of Nata de
dragon microbial cellulose biomass produced was the maximum speed (Vmax) of
1.38 μM/ml and constant optimum according to Michaelis-Menten (KM) 8.81 μM.
