Limosilactobacillus Fermentum Inacc B1295 Dan Pediococcus Pentosaceus Strain 2397 Yang Dienkapsulasi Hidrogel Cellulose Microfiber Dari Pelepah Kelapa Sawit
ABSTRACT Probiotics are live microorganisms that have benefits are given in sufficient quantities to their hosts. This study aimed to determine the autoaggregation, coaggregation, and cell surface hidrofobicity abilities of Limosilactobacillus fermentum InaCC B1295 and Pediococcus pentosaceus strain 2397 encapsulated in cellulose microfiber (CMF) hydrogel from oil palm fronds. This study was carried out experimentally using a complete randomised design (CRD) with four treatments of Limosilactobacillus fermentum InaCC B1295 and Pediococcus pentosaceus strain 2397 cells encapsulated with or without CMF hydrogel from oil palm fronds, and each treatment was repeated four times, so that 16 experimental units were obtained. The parameters observed in this study were autoaggregation, coaggregation, and cell surface hidrofobicity values. The results showed that Limosilactobacillus fermentum InaCC B1295 and Pediococcus pentosaceus strain 2397 encapsulated with CMF hydrogel from oil palm fronds significantly affecten the autoaggregation and hydrophobicity values, but did no significantly influence the coaggregation values. Cells encapsulated with CMF hydrogel from oil palm fronds fot both bacteria resulted in a decrease in autoaggregation ability by 13–14% and a decrease and increase in hydrophobicity by 1–2%. The coaggregation value of Limosilactobacillus fermentum InaCC B1295 and Pediococcus pentosaceus strain 2397 towards other lactic acid bacteria was higher than the coaggregation towards pathogenic bacteria.
