Eksplorasi Dan Uji Potensi Bakteri Asam Laktat Sebagai Kandidat Probiotik Dari Kulit Pisang (Musa Acuminata Dan M. Acuminata X M. Balbisiana Kv. Silk)
ABSTRACT
Lactic acid bacteria (LAB) is bacteria that produce lactic acid. Lactic acid bacteria
in general can live naturally in vegetables and fruits including banana peels.
Banana peel is rich in carbohydrates so that it can be a substrate for LAB growth.
This study aimed to isolate and characterize LAB from the peel of sweet banana
(Musa acuminata) and raja sereh banana (Musa acuminata x Musa balbisiana kv.
Silk), and their antibacterial properties. Isolation of LAB from banana peels was
carried out using the spread plate method using MRSA (Man Rogosa Sharpe
Agar) selective medium. All morphological characterization, physiological and
biochemical tests were carried out. The results of the isolation obtained 20 LAB
isolates. Based on the colony morphology test, all isolates were Gram-positive
bacteria and varied physiological and biochemical tests. The results of the
antibacterial test obtained 3 isolates were able to inhibit Escherichia coli, and 17
isolates were able to inhibit Staphylococcus aureus.
