Evaluasi Sifat-Sifat Probiotik Lactobacillus Fermentum Inacc B1295 Dan Pediococcus Pentosaceus Strain 2397 Dengan Dan Tanpa Enkapsulasi Hidrogel Cellulose Microfiber Dari Batang Kelapa Sawit
Probiotics are live microorganisms that can benefit the health of their host when consumed in sufficient quantities. The study aimed to evaluate the properties of cell surface hydrophobicity, autoaggregation and coaggregation of Lactobacillus fermentum InaCC B1295 and Pediococcus pentosaceus strain 2397 encapsulated and non-encapsulated with cellulose microfiber hydrogel from oil palm trunk. This study was carried out experimentally using a complete randomised design (CRD) with four treatments of Lactobacillus fermentum InaCC B1295 and Pediococcus pentosaceus strain 2397 cells encapsulated and not encapsulated with cellulose microfiber hydrogel from oil palm trunk, and each treatment was repeated four times, so that 16 experimental units were obtained. The parameters observed in this study were cell surface hydrophobicity, autoaggregation and coaggregation. The results showed that Lactobacillus fermentum InaCC B1295 and Pediococcus pentosaceus strain 2397 encapsulated with cellulose microfiber hydrogel from oil palm trunk significantly affected hydrophobicity and autoaggregation values, but did not significantly influence coaggregation values. Encapsulation with cellulose microfiber hydrogel caused the two bacteria to increase the surface cell hydrophobicity value by 4 ̶ 6% and todecrease in autoaggregation ability by 10 ̶ 14%. Coaggregation ability was more influenced by differences in bacterial genus. The coaggregation value of Lactobacillus fermentum InaCC B1295 and Pediococcus pentosaceus strain 2397 with other lactic acid bacteria was higher than the coaggregation value with pathogens.
