Penetapan Kadar Air, Abu, Protein Dan Lemak Dalam Susu Bubuk Di Balai Besar Pengawas Obat Dan Makanan Pekanbaru
ABSTRACT
BPOM is a Non-Ministry Government Institution that responsible for the
supervision to production and distribution of medicinal and food products. This
study has been conducted to analyze the moisture, ash, protein and fat in powder
milk. Analysis aim to determine whether the powder milk product on the market
have met the quality requirements SNI 01-2970-1999. The quality requirements
for moisture, ash, protein and fat is max 4,0%; max 6%; min 25% and min 26%.
Analysis of moisture, ash, protein and fat performed using the method of drying,
ashing, Kjeldahl method and Soxhlet extraction. Based on the analysis, average
content of water, ash, protein and fat in powder milk was 0.65%; 5.04%;
10.88% and 7.08%. The analysis showed that the powder milk product meet the
quality requirements SNI 01-2970-1999 for moisture and ash content, but not for
protein and fat content.
