Pemetaan Usaha Kuliner Spesifik Komoditas Perikanan Di Kota Pekanbaru Provinsi Riau
This research was conducted in June - August 2015 at restaurant specific for fishery commodities in Pekanbaru City, Riau Province. The objective of this research was to describe the restaurant specific for fishery commodities in Pekanbaru City, based on location, commodity specification and culinary product variety. This research used a survey method, with respondents comprising 13 of restaurant owners or restaurant managers. The results indicated that there were 13 restaurant specific for fishery commodities that located on 9 districts in Pekanbaru City. Most of these restaurants are located in District of Bukit Raya. There are as many as 17 fishery commodities that processed on fishery culinary in Pekanbaru, which is dominated by Gouramy (9 restaurants), Squids (7 restaurants) and Shrimp (7 restaurants). The variety of fish culinary product in Pekanbaru related to the majority consumer. Culinary of fish tend to be offered as side dishes majority for employees or consumer with family, and tend to served as a main course or snacks for majority middle-high economic consumer.
