The environmental contributes the most to causing disease, one of them is hygiene and food sanitation. Food and beverages can be contaminated at all stages of the food and beverage processing process. The subject of this research was sugar cane traders in the city of Jambi in Jambi Province and laboratory tests are carried out at the Jambi Regional Health Laboratory. Based on the results of research on the descrption of sanitation and hygiene, sugar can traders in Jambi can be concluded that sugar can traders have more bad habits in maintaining hygiene and sanitation of poor vender fasilities. Based on sanitation aspects of water hygiene, food ingredients and the presentation and aspects of environmental sanitation are more in the good category
