Optimalisasi Agroindustri Nanas Di Kecamatan Tambang Kabupaten Kampar
ABSTRACT
The main problem faced by pineapple farmers in Tambang District is the cheap price of pineapples, especially during the main harvest. Pineapple processing into various agro-industrial products is the right solution. The purpose of this study was to determine the product processing and income of the pineapple agro-industry in the Tambang District, namely: pineapple chips, pineapple dodol, pineapple diamonds and pineapple jam. From the research results it can be described that to produce 1 kg of pineapple chips, 22.50 kg of pineapple which has been soaked with salt water and baking soda to taste is drained and fried. To produce 1 kg of pineapple dodol, the raw material is 0.16 kg of pineapple plus 375 grams of glutinous rice flour, 250 grams of coconut milk and 250 grams of sugar, stirred thoroughly and then cooked in a pan for about 3 hours. To produce 1 kg of pineapple diamonds, the raw material is 0.16 kg of pineapple plus 500 grams of sticky rice, 250 grams of grated coconut and 250 grams of sugar, stir well and then cook in a pan for about 4 hours. To produce 1 kg of pineapple jam, the raw material is 4 kg of pineapple plus 1.5 kg of sugar, stirred thoroughly and then cooked in a pan for approximately 3 hours. By working the four pineapple agro-industry products, the agro-industry players obtained a profit of IDR 2.208.478, respecly from pineapple chips, pineapple dodol, pineapple diamonds and pineapple jam products of IDR 1.599.261, IDR 400.711, IDR 169.712 and IDR 38.794.
