Proses Lama Hidrolisis Pati Umbi Talas Menggunakan Asam Format
Hydrolysis is a chemical decomposition process by using water to separate chemical bonds from the substance. Acid hydrolysis is hydrolysis using acids that can convert polysaccharides into monosaccharides. Acids will be as a catalyst that can help in the process of breaking carbohydrates into sugars. This research aims to determine the length of hydrolysis made from taro tuber starch using formic acid. The study was conducted experimentally using a complete random design (CRD) consisting of five treatments with four repetitions. The treatment in this study is the hydrolysis of formic acid with a duration of 1.5 hours, 2 hours, 2.5 hours, 3 hours, and 3.5 hours. The observational data obtained were analyzed statistically using ANOVA and followed by the Duncan Double Range Test (DMRT) at a rate of 5%. Variance analysis showed that the long time of hydrolysis resulted in brick red precipitates in reducing sugar levels, clear color in starch content analysis, significantly affecting the water content and density of liquid glucose. The best treatment in this study was a hydrolysis time of 3.5 hours. The results of the starch content analysis resulted in a clear color, the reduced sugar content produced a brick red precipitate, 63.23% water content and a density of 1.16 g/ml.
