Kajian Profil Nilai Gizi (Proksimat, Asam Amino, Asamlemakdanmineral)Ikanlele(Clariasbatrachus) Dari Habitat Yang Berbeda
Study this aiming for determine proximate characteristics, amino acids (essential and non-essential), fatty acids and minerals in catfish meat (Clarias batrachus) from different habitats. The methods used in study this is method experiment comparison with a t-test design consists from 2 treatments that is compare between catfish river natural (LS) and catfish cultivation pool (LK). Research results show that proximate catfish meat from rivers and ponds each show water content of 76,16% and 77,62%, ash 1,06% and 1,01%, fat 2,15% and 3,63%, protein 17,42% and 16,09%, and carbohydrate 1,20% and 1,64%. Amino acid levels are highest in river habitats than pond habitat. The total number of amino acids in catfish river by 18,309% and catfish pool as big as 17,635%. Meanwhile, fatty acids are highest in the habitat pool than river. Total amount of fatty acids in catfish river by 103,576% and catfish pool by 108,079%. I can catfish own content nutrition in the form of minerals where highest in river habitat that is calcium 18,05 mg/100 (LS) and 17,51 mg/100 (LK), phosphorus 159,95 mg/100 (LS) and 158,69 mg/100 (LK), sodium 47,198 mg/100 (LS) and 45,954 mg/100 (LK),andiron 0,55 mg/100 (LS) and 0,504 mg/100 (LK).
