Aktivitas Dekonjugasi Garam Empedu Dan Penghambatan Bakteri Patogen Oleh Limosilactobacillus Fermentum Inacc B1295 Dan Pediococcus Pentosaceus Strain 2397 Dengan Dan Tanpa Enkapsulasi Hidrogel Cmf Dari Pelepah Kelapa Sawit
ABSTRACT
Probiotics are live microorganisms that confer health benefits to the host if
consumed in sufficient quantities. The activity of bile salt deconjugation and
inhibition of pathogenic bacteria needs to be carried out on Limosilactobacillus
fermentum InaCC B1295 and Pediococcus pentosaceus strain 2397 with and
without CMF hydrogel encapsulation from oil palm fronds. This study was carried
out experimentally using a completely randomized design (CRD) with four
treatments of Limosilactobacillus fermentum InaCC B1295 and Pediococcus
pentosaceus strain 2397 cells encapsulated and not encapsulated with cellulose
microfiber hydrogel from oil palm frond, and each treatment was repeated four
times, so that 16 experimental units were obtained. These parameters observed in
this study were the ability to deconjugate bile salts and the inhibition of pathogenic
bacteria. The results showed that L. fermentum InaCC B1295 and P. pentosaceus
strain 2397, with and without CMF hydrogel encapsulation from oil palm fronds,
did not significantly affect the ability to deconjugate bile salts, but had a significant
effect on the diameter of the inhibition zone. The ability to deconjugate glycolic
acid is greater than sodium taurocholate because intestinal bacteria more easily
hydrolyze glycine. The diameter of the inhibition zone of encapsulated L.
fermentum InaCC B1295 was smaller than cells without encapsulation.
