Penggunaan Kalium Permanganat Dengan Media Pembawa Tanah Liat Untuk Memperpanjang Umur Simpan Pisang Kepok
ABSTRACT
Banana is a climacteric fruit which has an advance rate of respiration. The respiration of the banana can be inhibited by deactivated the ethylene using potassium permanganate (KMnO4) with clay as a carrier. The use of clay mixed with KMnO4 as ethylene absorbent were able to maintain weight loss, respiration rate, total dissolved solids, total acid titrated, and color of kepok banana. The purpose of this study was the best obtain of KMnO4 with clay as a carrier in extending the shelf life of kepok banana. The research used experimental method by using a complete randomized design with five treatments and four replications. Treatment consist of P0: without ethylene absorbent agents, P1: 30 g ethylene absorbent agents, P2: 40 g ethylene absorbent agents, P3: 50 g ethylene absorbent agents, and P4: 60 g ethylene absorbent agents. Observations were made on day 6, 8, 10, and 12 on weight losss, total dissolved solids, total acid titrated, and color index. The observation of respiration rate was performed on days 0 and 6. Data were analized statistically using the Analysis of Variance (ANOVA), followed by using a Duncan’s Multiple Range Test (DMRT) at the level of 5%. The best treatment was P4 with 60 g ethylene absorbent agents at a shelf life of 12 days experienced a weight loss 7,38%, total dissolved solids 15,14%, total acid titrated 3,88 ml/100 g, color index 3,00 (yellowish green), and the respiration rate of P4 on day 6 was 19,75 mg CO2/kg/hour.
