Penggunaan Ekstrak Akuades Mahkota Rosella (Hibiscus Sabdariffa) Sebagai Indikator Alami Pendeteksi Boraks
Food Additives are materials added to food materials to affect the nature
and shape and quality of food materials. Borax (boric acid) is a chemical
compound in the preservative group that is prohibited from being added to food
raw materials. The use of borax as a food additive has many negative effects on
health. Anthocyanins are chemical compounds that are contained in the Rosella
(Hibiscus sabdariffa) plant. The purpose of this study was to determine the color
changes that occur in aquades rosella (Hibiscus sabdariffa) extract when reacted
with borax and other food additives. The design of this research is a laboratory
experiment with the extraction method (maceration). The results showed that the
aquades rosella (Hibiscus sabdariffa) extract changed color from deep purple to
purplish red at 1 g/dl of borax.
