Pengaruh Limbah Kulit Buah Terhadap Kualitas Terasi Udang Rebon (Acetes Erythraeus) Sebagai Rancangan Modul Bioteknologi Konvensional SMA
This study aims to determine the effect of the mangosteen peel waste, dragon
fruit peel and carmoisin on the quality of rebon shrimp paste (Acetes erythraeus) and to
produce a module design as a teaching material for biology class XII SMA. This study consisted
of two stages, namely experimentation and module design in April-May 2021. Experiments with
Completely Randomized Design (CRD) and using 4 treatments with 3 replications. The
treatment given was in the form of different dyes, natural dyes (mangosteen rind and dragon
fruit rind) and synthetic dyes (karmoisin). The treatments were: P0 (treatment without dye), P1
(mangosteen peel dye extract), P2 (dragon fruit skin dye extract), and P3 (carmoisin dye).
Parameters measured included protein content, fat content, pH level, water content, and
organoleptic tests. The results showed that the fruit peel waste had a very significant effect on
the quality of rebon shrimp paste. The best treatment was P1 (mangosteen rind dye extract) with
a protein content of 20.15%, a fat content of 0.08%, a pH level of 6.8, a water content of
23.97%, an appearance test value of 8.9, a test value of odor 8.6, taste test value 8.6, texture
test value 8.5 and hedonic value 8.6. The experimental results are used for modules as teaching
materials for conventional biotechnology materials in Biology learning in class XII SMA.
