Karakteristik Morfologi Dan Fitokimia Ubi Jalar (Ipomoea Batatas L.) Di Pekanbaru, Provinsi Riau
Sweet potato (Ipomoea batatas L.) belongs to the family Convolvulaceae which is one of the main commodity crops in Indonesia. Sweet potato plants have a high morphological variation on stems, leaves, flowers, and tubers. Phytochemical studies are studies that aim to determine the content of plant secondary metabolites. The aim of this study was to investigate the morphological and phytochemical characteristics of sweet potato (Ipomoea batatas L.) from Pekanbaru, Riau. This study was conducted from October 2021 to January 2022. Sampling was carried out using the exploration method. Morphological characters were described, scored, and analyzed using NTSys pc2.02 to construct dendrogram. The results showed that a total of 5 cultivars of sweet potato were found, namely the cilembu, jagi, antin 3, beta 2, and kidal. The similarity coefficient values ranged from 0.12 to 0.52. The results of phytochemical screening carried out on the skin and sweet potatoes studied showed three groups of secondary metabolites, namely flavonoids, saponins, and terpenoids. Fresh samples of sweet potato skin identified the presence of flavonoids (3 cultivar), saponins (5 cultivars), and terpenoids (4 cultivars), while the dried samples of sweet potato skins showed flavonoids (5 cultivars), saponins (5 cultivars), and terpenoids (5 cultivars). In the fresh sample of sweet potato tubers identified the presence of flavonoids (2 cultivars), saponins (5 cultivars), terpenoids (4 cultivars), while the dry sample of sweet potato tubers yielded flavonoids (1 cultivar), saponins (5 cultivars), and terpenoids ( 4 cultivars). The highest saponin result were found in fresh and dry samples from tubers and skins of jago cultivar. The highest flavonoid result were found in dry samples from skins of antin 3 cultivar, and the highest terpenoid result were found in fresh samples from tubers of antin 3 cultivar.
