Abstrak
Malong fish (Muraenesox cinerus) is a type of demersal fish that lives to a depth of 100 m in river estuaries, besides being able to be used for raw materials in the surimi industry can also be used for raw materials for various processed products. This study aims to determine the difference in the quality of dried malong fish in the form of diced pieces packed with vacuum and non-vacuum. The method used is an experimental method, namely conducting an experiment to make dried malong fish in the form of diced pieces packed with HDPE (High Density Poly Ethylene) Vacuum (X1) and non-vacuum (X2), with a storage duration of P 0 (0 days), P 1 (15 days), P2 (30 days), with a salt concentration of 20% . The results showed that vacuum packaging with 15 days of storage had the best value with an appearance value of 6.01 (the color is still brilliant and the dice shape is still intact). At an odor value of 6.52 (the smell is still acceptable to the panelists because the dried malong fish dice still have a characteristic smell like dried fish). At a taste value of 6.25 (the taste is still accepted by the panelists due to the change in taste that does not differ much from 0 days). The texture value of 5.45 has the best value because the vacuum packaging has no air which causes the product to remain intact. The water content value of 22.49% in dried malong fish dice the longer the storage, the water content value increases. The highest dry malong fish dice fat content value was found on day 30 of the vacuum pack, which was around 8.02807%, and the best TPC value was 5.5x10^4 Cfu/g. The best treatment can inhibit the growth of bacteria and maintain the quality of dried malong fish dice. Keywords: Malong Fish, Proximate, Organoleptic
