Substitusi Tepung Buah Nipah (Nypa Fruticans) Pada Pembuatan Nuget Ikan Lomek (Harpodon Sp.)

Abstrack
Nugget is one of the processed meat product made from ground meat that is generally formed into rectangular pieces and coated with breadcrumbs. Lomek fish nuggets with nypa fruit flour replacement is one of the diversification of fishery products that use nypa fruit flour as binding agent. This study aims to determine the level of consumer acceptance of lomek fish nuggets with nypa fruit flour replacement and to determine the best number of nypa fruit flour replacements in the manufacture of lomek fish nuggets with nypa fruit flour replacement. The research method used was a Non-factorial Completely Randomized Design (CRD), consisting of 4 treatment levels, namely P0 (75g tapioca flour), P1 (50g tapioca flour : 25g nypa fruit flour), P2 (25g tapioca flour : 50g nypa fruit flour) and P3 (75g nypa fruit flour) with 3 replicates resulting in 12 experimental units and went through 3 phases, namely 1) making nypa fruit flour, 2) making lomek fish nuggets with replacement of nypa fruit flour, and 3) analysis. The results were analyzed with the BNJ follow-up test. The result obtained is that the substitution of nypa fruit flour has a significant effect on consumer acceptance. The best treatment for replacement of nypa fruit flour on lomek fish nuggets was treatment P3 (75 g nypa fruit flour) with a visual value of 7.49 ± 0.01, an scent value of 7.70 ± 0.08, a taste value of 7.69 ± 0.04 and texture value of 5.75 ± 0.11 with the characteristics of dark gray nugget, strong lomek fish flavor and no nypa flavor, nugget taste good, delicious and taste like nypa fruit and nugget texture is dense and slightly grainy. Chemical content, water content 56.10 ± 0.34, ash content 1.27 ± 0.02, fat content 1.10 ± 0.01, protein content 5.45 ± 0.07, carbohydrate content 36.08 ± 0.38.
