Boric and its compounds are substances or materials that are prohibited from being used as food additives. To detect borax contant in food products, a detection indicator is needed. Anthocyanins are flavonoid compunds that act as an antioxidant and responsible for the color of rosella (Hibiscus sabdariffa) plant. The purpose of this study was to determine the color changes that occur in the polar extract of Rosella (Hibiscus sabdariffa) petals when reacted with borax and other food additives. The design of this research is a laboratory experiment. Rosella (Hibiscus sabdariffa) petals were extracted using maceration with a mixed solvent (ethanol:acetic acid:distilled water, 25:1:5) for ± 18 hours. The extract was then reacted with food additives (borax 1 gr/dL, sugar 1 gr/dL, salt 1 gr/dL and NaOH pH 9) as well as various concentration of borax solutions (1 gr/dL, 0,25 gr/dL, 0,0625 dan 0,015625 gr/dL). The results showed that the colour change in polar extract of rosella (Hibiscus sabdariffa) petals reacted with 1 g/dL boraks and 1 g/dL NaOH pH 9 was hardly distinguishable by visual. Besides that, the color change of borax solution between concentrations was also hardly distinguishable by visual. Rosella extract solution cannot be used to detect borax because the color change was not specific. Optimization is still needed to study the potential of extact rosella as a natural indicator for borax detection. .
