ABSTRACT
Vacuum freeze-drying is one of the best drying methods for preservation purposes because it is able to remove moisture content without reducing the quality of the dried product. Indonesia as an agricultural country has one of the agricultural products, namely rice. Rice processed into rice is one of the staple foods for the people of Indonesia. To improve the quality of production in the agricultural sector is largely determined by product input, namely seeds. One of the stages of the rice production line is drying. When harvested, the moisture content of rice ranges from 20-25%, while the standard for storage or seeding is 9-11%, therefore the drying stage is required. Drying determines the shelf life and quality of the rice seeds produced. To dry rice seeds, a vacuum freeze dryer is used. By utilizing the vapor compression refrigeration cycle, the vacuum freeze dryer is designed using double evaporators, namely indoor and outdoor evaporators, by utilizing the exhaust heat from the condenser as a further heater of the vacuum freeze dryer. This research discusses the design and testing of indoor and outdoor evaporators for drying rice seeds. The indoor evaporator is designed using the serpentine type, from the design carried out the total length of the evaporator is 23 meters with an outer diameter of 0.005635m tube. For outdoor evaporators, a fin and tube type is used with a total evaporator length of 12 m and an outer diameter of 0.005635m.
