ABSTRACT
Freeze vacuum drying is one of the most effective drying methods compared to other drying methods, such as sun drying, solar drying and others. where in vacuum freeze drying it can maintain the quality of the product you want to dry, besides that this method is also very effective for drying products that are easily destroyed when exposed to high temperatures. Where the working principle of vacuum freeze drying is controlling pressure (P) and temperature (T). The freeze vacuum drying process is carried out by inserting the product you want to dry into a vacuum chamber, with pressure and temperature that must be maintained below the freezing point. triple, so that the sublimation process occurs without the melting process, then a secondary drying process is carried out to remove the remaining water content, which in this process uses waste heat from the condenser. This study aims to design and manufacture indoor & outdoor condensers for vacuum freeze drying machines, where the fin and tube type condenser is placed outside of the drying chamber (outdoor) and the serpentine type condenser is placed inside the vacuum freeze drying chamber (indoor). For the length of the tube used in the serpentine type condenser is 44.05 m, and for the fin and tube type condenser with a length of 11.55 m and 43 pieces of tube with each tube length is 0.27 m with a total of 77 fins. In this study can eliminate rice water content of 1.1 kg or 78.57% of 1.4 kg of water that you want to remove.
