Kaji Eksperimen Freeze Vacuum Drying Menggunakan Sistem Double Kondenser Dan Double Evaporator Pada Pengeringan Gabah Padi
ABSTRACT
Vacuum freeze drying is a drying method that is carried out at low temperatures, reducing product damage caused by high temperatures. Rice is very easily damaged and seasonal, so farmers who apply it are recommended that the cultivation technology will produce large quantities of rice at harvest, including the durability of fresh rice grain which is not good at ± 5 days, is easily damaged because it contains 25% moisture content and selling is low so that during the main harvest rice farmers will suffer losses. This study aims to develop a freeze vacuum drying method using a double condenser and double evaporator system. Vacuum freeze dryer uses working fluid R134a as refrigerant and rice as research object with a maximum capacity of 10 kg of rice grain. This research was able to remove up to 96.6% of water content at a test capacity of 2.5 kg with a final temperature of -12.98°C. In the 5 kg capacity test, the water content was lost up to 95% with a final temperature of -12.41°C. In the 10 kg capacity test, the water content lost up to 78.5% with a final temperature of -12.082°C.
